A land designed by olive trees, Salento is a silver landscape which is the true richness of Puglia. Leccina and Favolosa are the predominant cultivars in our olive groves, but there is no shortage of non-native varieties such as Frantoio, Nociara, Carolea and Pendolino, which only here express completely peculiar olfactory and gustatory sensations.
Leccino
DIFFUSION AREA
A variety also called Leccio or Premice is native to central Italy.
TREE
A tree of good vigour, with a spreading habit with pendulous fruiting branches and thick foliage.
FLOWERING
Medium-sized, elliptical, intense green leaves.
Drupes of ovoid shape and an average weight of 2.5 g with variable yield, from 15 to 19%, depending on the harvest period.
FRUIT
Agronomic and production characteristics: The production is quite high and constant with characteristics suitable for use also as table olives. The cultivar is self-sterile and requires pollinators such as the Pendolino.
ORGANOLEPTIC CHARACTERISTICS OF THE OIL
The extracted oil has a light fruitiness of excellent quality but without particular aromatic peaks. The taste is slightly bitter and spicy with notes of aromatic herbs such as mint, basil, artichoke chicory, almond, golden yellow in colour with green reflections and medium fluidity.
Favolosa
DIFFUSION AREA
It is a variety that originates from the Frantoio variety and it has recently been introduced in Salento and in our company thanks to its good resistance to Xylella fastidiosa.
TREE
Low vigour tree, generally pendulous habit, long fruiting twigs, with inflorescences and fruit in clusters, constant in production with an early entry into production and early maturation, with high and constant production.
AGRONOMICAL CHARACTERISTICS
It is partially self-sterile. It is partially resistant to cold, mange, cycloconium and flies. The olives are intended exclusively for the production of oil.

Elliptical grey-green leaf.
ORGANOLEPTIC CHARACTERISTICS OF THE OIL
The oil is pleasantly fruity with a high content of oleic acid and a medium-high content of polyphenols.
